Veggie Mac and Cheese Meal

This is a popular meal at my house, and a great way to get my toddler to eat veggies!

Ingredients

  • macaroni and cheese (in the box)
  • butter
  • milk
  • frozen peas(I like the steam-in-a-bag kind, when on sale for $1.00)
  • 2 hot dogs cut up OR a can of tuna fish: your choice!

Directions

Boil water for noodles. While you are waiting for noodles: microwave (or boil) your frozen peas, and cut your hot dogs OR open and strain tuna. Prepare mac and cheese the way you like it, stir in desired amount of peas and choice of meat. If it seems dry, add a little more milk.

This meal should make 4-5 servings and cost under $2.50. Hints: if you break up the tuna really fine, toddlers won't pick it out. If tuna is a no go, hot dogs are always a good bet with kids.

Sounds good. To make it a little lower in fat, subsitute the milk and butter, as shown on the package, with 2 Tablespoons Skim Milk and 1/3 cup Low-Fat Sour Cream.
