I'm looking for a recipe for cucumber salad. I tried it once and just loved it, but I forgot to get the recipe. I'm pretty sure that the dressing was a balsamic and olive oil vinaigrette - or something similar. Help!

I think this is the recipe you are looking for.MARINATED TOMATO AND CUCUMBER SALAD

4 lg. tomatoes, cut into wedges
2 cucumbers, peeled & cubed
1 lg. Vidalia onion, peeled & sliced
1/2 c. olive or salad oil
1/4 c. cider vinegar
1 tbsp. sugar
1/2 tsp. salt
1/8 tsp. oregano

Put prepared vegetables in large salad bowl. In smaller bowl combine remaining ingredients with wire whip until salt and sugar dissolve. Pour dressing over vegetables and let stand in refrigerator about 1 hour before serving for best flavor.

I have a recipe that my family likes. It may be similar to what you are looking for. It is called 8 Hour Pickles. Enjoy!

8 c. sliced cucumbers
2 large green peppers or red peppers (one of each)
1 c. sliced onion
1 t. celery seed
1 t. mustard seed
4 level T. salt
2 c. sugar
1 c. vinegar

Add all ingredients and stir. Add cucumbers last. Put in glass jar in fridge. You may also add tiny sliced green tomatoes, tiny carrots, cauliflower, or celery.

I love to make a Greek cucumber salad.

Cut the cucumber in small cubes, with the skin on.
(Sometimes I chop a small zuchini with this)
chopped red onion
cut up red bell pepper
Pitted kalamata olives (maybe a dozen)
Chopped roma or cherry tomatoes
Put in bowl and sprinkle with a little olive oil and lemon juice. Add some oregna and salt.. Let set for couple hours to marinate in the frig.
Add some crumbled feta cheese.
Mix and serve.
I use proportions as to how much salad I want.

I have two cuke recipes that I use a lot over the summer (and, oddly enough, gave the recipes to a co-worker today).

Sliced Cucumber
Sliced Onion (white, yellow or red...red will change the color of the next ingredient though)
Cider Vinegar to cover
1 TBSP sugar

Place all in a bowl and refrigerate for at least an hour...GREAT the next day!

Place all in a bowl and refrigerate. Great side dish, especially on hot hot days. Also is good on a potato roll as a sandwich!

Never have tried it the way you are saying. But, being of German decent. Below is how I make Cucumber salad.
GERMAN CUCUMBER SALAD

2 lg. cucumbers
1 tsp. salt
2 tbsp. sugar
1 tbsp. white vinegar
1/2 c. sour cream
1 tsp. dill, dry
1 tsp. paprika

Peel cucumbers and slice very thin. Place cucumbers in colander and sprinkle with salt. Let stand 15-30 minutes. Squeeze liquid out of cucumbers. Whisk remaining ingredients and pour over cucumbers. Best is marinated for an hour or more.

I cut up cucumbers, bell peppers, purple onions, and tomato wedges and, drizzle with as much Italian dressing as you like and salt and pepper.. Chill and enjoy..always a hit for my family..
