Jalapeno Cheese Bites

An easy and yummy baked appetizer. These refrigerate well and you can easily re-heat a couple in the microwave for about 20 seconds or so.

Ingredients:

  • 1/2 cup plus 2 Tbsp. milk
  • 1/2 cup water
  • 2 eggs, beaten
  • 1 1/3 cups cheddar cheese, shredded
  • 2/3 cup flour
  • 3/4 tsp. baking powder
  • 2 Tbsp. plus 2 tsp butter, melted
  • 2 Tbsp. chopped green onions
  • 3 Tbsp. diced jalapeno peppers from small can (make the Tbsp. heaping if you love more heat)
  • Sour Cream

Directions:

Preheat the oven to 350 degrees F. Lightly grease an 8x8 inch baking dish. Mix milk, water, eggs, cheddar cheese, flour, baking powder, butter, green onions and jalapeno peppers in a medium bowl. Spread mixture evenly into the baking dish and bake for about 30 minutes or until slightly browned.

Cool and then cut into 2 inch squares. Serve warm with sour cream on the side.
