Ingredients:
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 2 Tbsp. butter
- 2-2 1/2 cups tomatoes, cooked
- 2 cups celery, diced
- 2 cups fresh or frozen okra, cut up
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. basil or oregano
Directions:
In skillet, saute onion and green peppers in butter. Stir in remaining ingredients. Cook only until celery is crisp-tender, 15-20 minutes. Makes 6-8 servings.
