Cheesy Noodle Dessert

Here is a great way to use leftover noodles.  I found this recipe in the 1978 book ' Betty Crocker's Microwave Cooking'

Cheesy Noodle Dessert

  • 8 ounces cream cheese
  • 1/2 cup milk
  • 1/3 cup sugar
  • 2 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg or cinnamon
  • 1/4 cup raisins
  • 2 cups noodles, cooked
  • Ground nutmeg or cinnamon
  • Sweetened fruit (strawberries, blueberries, raspberries)

Microwave cream cheese uncovered in round baking dish, 8 x 1 1/2 inches, until softened, 45 seconds to 1 minute; beat until smooth.  Beat in milk, sugar and eggs.  Stir in salt, 1/4 teaspoon nutmeg, the raisins and noodles.  Spread evenly in baking dish; sprinkle with nutmeg.

Microwave uncovered 3 minutes; turn dish on-quarter turn.  Microwave until center is just about set, 2 1/2 to 3 1/2 minutes.  Refrigerate until set, at least 1 hour.  Cut into wedges and serve with sweetened fruit.
