Waldorf Salad

Waldorf Salad I

Ingredients:

  • 1 lg. red apple
  • 1 banana
  • 1 cup either red or white grapes
  • 1/2 cup finely diced celery
  • 1/2 cup pecans
  • 1 cup mini marshmallows
  • 1/4 cup powdered sugar
  • 1/2 tsp. vanilla
  • 1/8 tsp. almond
  • 1 pt. heavy whipping cream

Directions:

Wash apple and grapes well. Pare apple, leaving skin on and dice. Peel and slice banana. Dice grapes. Add celery and broken pecans and marshmallows. Whip cream, adding flavorings and powdered sugar. Pour over salad and serve.

Waldorf Salad II

Ingredients

  • 4 medium apples
  • 1 cup diced celery
  • 20 walnut halves
  • 4 tsp. mayonnaise
  • 8 lettuce leaves

Directions

Wash apples but do not peel them. Core and dice and mix well with celery and walnuts. Mix with mayonnaise and place on crisp lettuce leaves. Chill and serve.

Waldorf Salad III

Ingredients

  • 1 cup pineapple juice
  • 2/3 cup sugar
  • 1 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 eggs
  • 3-4 Tbsp. water
  • 6 apples, diced
  • 2 cups chunk pineapple
  • 1/2 cup chopped celery
  • 2 cups seeded grapes
  • 1/2 cup nuts

Directions

Bring pineapple juice to a boil. Stir together sugar, cornstarch and salt. Add egg and blend. Stir in water. Add to the hot pineapple juice. Cook over low heat. Cool and add to remaining ingredients.

My mom has made Waldorff Salad for years for Thanksgiving. It is fabulous and a bit on the tart side. We Fight over who will bring the leftovers home.

You will need.

About 6 apples, cored, cut into chunks
a bunch of grapes, i use seedless purple
a couple stalks of celery cut into small pieces
a bag of walnuts
1 brick of extra sharp cheese, cut into bite size chunks
1 container of sour cream

mix everything in a bowl and refridigerate.

YUMMMMMMMMMM
