Apple Muffins I

Ingredients

  • 2 cups flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1 egg (beaten)
  • 1/3 cup vegetable oil or melted shortening
  • 2/3 cup sweetened applesauce
  • 1/2 cup milk

Directions

Sift dry ingredients together. Make a well in center and add remaining ingredients. Stir only enough to mix. Spoon into muffin pan cups that have been lightly greased on the bottoms only. Sprinkle with mixture of 2 Tbsp. white or brown sugar and 1/2 tsp. cinnamon. Bake at 400 degrees F for 20-25 minutes.

Apple Muffins II

Ingredients

  • 1-1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1-1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 cup milk (2% ok)
  • 1/3 cup butter, melted
  • 1 egg, slightly beaten
  • 1 cup finely chopped apple

Directions

Heat oven to 375 degrees F. Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into greased 12-cup muffin pan. Bake for 18 to 23 minutes or until lightly browned. Let stand 5 minutes, remove from pan.

Note: These muffins can also be made in the Texas size muffin pans, but you'll get 6 muffins instead of 12.

Apple Muffins III

Ingredients

  • 3/4 cup milk
  • 1 egg, beaten
  • 1/4 cup oil
  • 2 cups flour
  • 1/2 cup sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup finely chopped apples
  • 1/4 cup raisins

Directions

Combine milk and egg in small bowl. Stir in oil. Combine dry ingredients in bowl. Add apples and raisins, tossing to coat. Stir in liquid ingredients until just mixed. Fill muffin cups 2/3 full. Bake at 400 degrees F for 20-25 minutes or until golden brown.
