Mexican Breakfast Scramble

Ingredients
  • 6-8 corn tortillas cut into small squares
  • 6-8 oz. your favorite salsa
  • 4-6 eggs
  • Vegetable oil 2 Tbsp. or so
  • optional cheese

Directions

Place corn tortillas into hot oil in fry pan, stir. Then while tortillas are still soft, add eggs and salsa.

Some do add sprinkle of parmesan cheese or some shredded cheese to this It's a quick breakfast for all and tasty.
