Blue Ribbon Oatmeal - Peanut Butter Cookies

My children made and entered these at the county fair one year. Each won the blue ribbon in their respective age group for the "Peanut Butter Cookie" category.

Ingredients

  • 2 cups oatmeal
  • 1 1/2 cup flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup butter or margarine
  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla

Directions

Preheat oven to 350 degrees F. Mix oatmeal, flour, baking powder, baking soda, and salt. Set aside.

Melt butter/margarine. Mix in peanut butter. Add both sugars and cream till smooth. Let cool.

Add eggs and vanilla to the peanut butter mixture, then stir in the dry ingredients.

Drop 2 inches apart on an ungreased cookie sheet. Bake 10-12 minutes.
