Pea Salad

I remember my grandmother making this pea salad. I've updated it and added a few more ingredients. It goes with almost any meal as a side dish. So good with bbq ribs, pork chops, chicken, ham, any meat really. I even like it just by itself. The curry powder gives it it's umph. Adjust the ingredients to suit your taste.

Ingredients:

  • 1 can drained peas.
  • 1 small onion (chopped).
  • 2 boiled eggs (chopped) could use only 1 egg
  • 1 tsp. Red wine herb vinegar. (or to taste)
  • 1 Tbsp. sugar (or to taste)
  • 1 Tbsp. mayonnaise (or you can leave it out and only use Marzetti)
  • Marzetti slaw dressing (I add enough to dress all ingredients I like it kinda soupy)
  • celery seed
  • dill weed
  • curry powder
  • leaf. Marj
  • basil leaves
  • parsley flakes
  • leaf oregano
  • thyme
  • a shake of "original" mrs. Dash
  • few shakes of garlic powder

Directions:

Mix all in a bowl and toss to cover. Chill.

The curry powder gives it "it's taste". I put curry powder in most all my salads; egg, potato, macaroni, tuna, salmon. I just add until I think it tastes just right. Really good with ribs, chops, ham, anything!

The cooking time is for boiling the eggs. Maybe 15 minutes. Nothing else needs to be cooked. I prepare the other ingredients while waiting on the eggs to boil.

Pea Salad

Love the peanuts in this recipe! Very good!

Ingredients:

  • 1 (10 oz.) pkg. frozen peas
  • 1/2 cup celery, chopped
  • 1/2 cup cheese, cubed
  • 3 hard-cooked eggs
  • 1/2 cup dry roasted peanuts
  • salt and pepper, to taste
Dressing:
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise

Directions:

Combine salad ingredients. Mix sour cream and mayonnaise together. Pour over salad and mix well.

Servings: 8-10
Prep Time: 10-15 Minutes
Cooking Time: 0 Minutes

  • 3 or 4 hard-cooked eggs, diced

Ingredients

  • 10 oz. fresh or frozen peas
  • 1 cup sliced celery
  • 1 cup chopped cauliflower
  • 1/4 cup diced green onion
  • 2 Tbsp. sliced pimento
  • 1 cup roasted cashews or sunflower seeds
  • 1/4 cup crisp cooked crumbled bacon
  • 1/2 cup sour cream
  • 1 cup prepared Ranch dressing
  • 1/2 tsp. Dijon mustard
  • 1 small clove garlic, minced

Directions

Rinse peas in hot water (steam if fresh); drain. Combine vegetables, nuts and bacon with sour cream. Mix prepared dressing, mustard, and garlic together. Pour over salad. Toss gently; chill.

Bring dressing ingredients to a boil. Pour over mixed veggies. Add a dash of paprika. Cook until veggies are tender, refrigerate.


Cook peas accordingly. Drain; cool. In a large bowl, combine all ingredients. Chill and serve.
