St. Patrick's Day Salad
- 3 1/4 cups boiling water
- 2 pkgs. lime gelatin
- 2 pkgs. cream cheese (3oz. size)
- 1/2 cup chopped pecans
- 1 can pineapple, crushed or chunk (reg. size)
- 1 cup Miracle Whip
- 1/2 pint whipped cream
- 1/2 cup sugar
First layer: Dissolve 1 package of gelatin with 2 cups water. Add nuts and pineapple. Pour into mold. Chill until set.
Second layer: Dissolve 1 package or gelatin in 1 1/4 cups boiling water. Chill until somewhat thickened and whip. Add softened cheese and Miracle Whip to blend well. Fold in whipped cream and sugar. Pour onto first layer.
