Pickled Beets

I love these so much! My mom had these around the house all the time when I was growing up! Yum! Love the tangy taste!

Ingredients:

  • 5-6 lb. beets (depending on size)
  • 1 cup beet juice
  • 1 cup sugar
  • 1 cup vinegar
  • spices to taste, using stick cinnamon

Directions:

Simmer beet juice, sugar, vinegar, and spices. Add beets; boil gently a few minutes. It seems the longer these set, the better they taste.

Prep Time: 5-10 Minutes
Cooking Time: 5 Minutes

I just made these Beet Pickles. I had to double for 4lb's of beets. I had 5 pints of pickles. I also added 1 teaspoon of canning salt and a tablespoon of pickling spice tied in cheesecloth, and boiled in the mixture for a few minutes. Then poured this over the beets and processed in a boiling water bath for 10 minutes. I tasted a jar and they were really good!
