Sweet Potato Dumplings

Ingredients

  • 1 can of 10 count flaky biscuits
  • 1 large sweet potato-raw
  • 1 cup sugar(I mix both-white/light brown)
  • 1 stick of margarine or butter
  • 1 cup of water
  • cinnamon

Directions

Peel sweet potato and slice in rounds, slice rounds in half (half moons). Separate each biscuit in two pieces, pat out into as large of a circle as you can. Put 1 or 2 slices of potato and wrap with biscuit. Place all dumplings into a lightly greased 9x13 inch dish.

In small sauce pan, put water, sugar and stick of margarine. Melt but do not boil. Pour liquid over dumplings, sprinkle with cinnamon and bake about 20/25 minutes in 375-400 degree F oven until browned and bubbly.

You can use apples, pears, peaches; any firm raw fruit.

This is a wonderful pot luck dish!
