Crockpot Meatloaf

I had a meatloaf recipe that was cooked in the crockpot. It was made with ground beef, stove top dressing mix, eggs and what else? Have misplaced the recipe and cannot remember the amounts. There is one on Kraft's site but it is not the one. The one I am looking far does not have BBQ sauce or tomato sauce in it.

Kraft had a mushroom lovers meatloaf recipe on their page and now it is gone. They changed it! Thank you Sarah for your recipe, I have looked every where for it and now my search is over.

Slow Cooker & Stuffing Meatloaf Dinner
1 package instant boxed stuffing mix - including seasoning packet
3 Eggs
2 pounds Lean Ground Beef
1 cup Catsup
2 or 3 Cans whole white potatoes (drained)
Mix dry stuffing mix and seasoning packet with eggs and lean ground
beef, place in crockpot. Turn heat to low setting, and cook for 6 - 8
hours. Add catsup to top of meatloaf and canned potatoes around edges.
Cook for an additional 1 - 2 hours.

I have a crockpot meatloaf recipe but it does not contain stuffing mix. But its still good.

Meatloaf on a Bed of Potatoes - Crockpot

2 T olive oil
3 large russets, cut into 1 to 1-1/2 inch chunks
2 lb ground sirloin
2 large eggs, beaten
3/4 cup crushed saltine crackers
3/4 cup ketchup
2 T dehydrated onions (optional)
1 tsp salt
Freshly ground black pepper

Topping

3/4 cup ketchup
1/3 cup brown sugar
1 tsp Dijon mustard

Combine oil and potatoes in crock pot, toss to coat. Spread in an even layer on the bottom of the crock.

In a large bowl, combine beef, eggs, crumbs, ketchup, onion, salt and pepper. Mix gently, do not compact. Shape into oval or round, place on top of potatoes. Spread with topping.

Cover and cook on High for 1 hour. Reduce heat to Low and continue to cook for 6-7 hours, or until a meat thermometer reads 160º to 165ºF.

I used plain ketchup for the topping since that is my family's preference.

NOTE*To make the meatloaf easier to remove: Take two long pieces of foil and fold them into two strips. Place them across each other over the potatoes and set the meatloaf on top. Use as handles to remove when the meatloaf is done.

I was looking for the recipe...and I looked at my Stovetop stuffing boxes. I searched at Kraftfoods.com and found a bunch of recipes. Here is the link: http://www.kraftfoods.com/ Search under meatloaf

I looked thru a few and the following used Stuffing...
Family Classic Meatloaf
Easy Pleasing Meatloaf
Fiesta Meatloaf

On my Mushroom stuffing Box there is this recipe:
1 jar (12 oz) mushroom gravy, divided
2 pounds ground beef
1 (6oz) box Stovetop stuffing mux with mushroom & onion
2 eggs lightly beaten

1. Pour 1/4 cup of the mushroom gravy into large bowl. Add 1 cup water and all remaining ingredients, mix lightly.
2. Shape meat mixture into 4 oval loves on foil lined baking sheet. Top with remaining gravy.
3. Bake at 400* for 30 minutes or until meat loaves are no longer pink in centers.

Makes 8 servings.
