A family favorite.
Ingredients:
- 2 cups small curd cottage cheese
- 2/3 cup whipping cream
- 2/3 cup sugar
- 2/3 cup all-purpose flour
- 1/4 tsp. salt
- 1 egg slightly beaten
- 1 egg yolk slightly beaten
- 1 Tbsp. corn syrup
- 1 Tbps. melted butter
- 1 pre-baked 9 inch pastry shell
- lemon or orange slices (optional)
Directions:
With a mixer beat the cottage cheese until nearly smooth. Add whipping cream. Set aside. Then in a large mixing bowl combine the sugar, flour, and salt. Stir in the slightly beaten egg and egg yolk, corn syrup, and melted butter. Stir in the cottage cheese mixture. Pour mixture into baked pastry shell and bake ar 350 degrees F. for 45-50 minutes or until a knife inserted near the center comes out clean. Cool pie. Place in refrigerator for 4 hours before serving. Top with slices of lemon or orange. Serves 8.
