Ingredients
- 2 cups diced potatoes, cooked in 5 c. water + 1 t. salt
- 1 1/2 tsp. caraway
- 1/4 tsp. salt-free seasoning
- 2 cups sliced carrots
- 1/2 cup diced celery
- 4 cups chopped cabbage
- 4 cups reserved potato water
- 1 can beets, cut up
- 1 cup tomato puree
- 1/2 tsp. dried dill weed
- 1 large onion, cut up
- freshly ground black pepper
Directions
Simmer together in pot. I make a lot of soup and tried this cooking the potatoes, carrots, celery and cabbage in homemade chicken stock, then added rest of ingredients and simmered. A good meatless meal!
