(Archived Jun 02, 2010)Summer Fruit Salad

Recipe: Summer Fruit Salad

I used to love fruit salad, but it's kind of soft. My mom used to put a drained can of mixed fruit cocktail and a partially drained can of both mandarin oranges and pineapple chunks in a bowl. Then, came the chunked apples and bananas, and any other fruit you like to add "more of" then what is in the cocktail. She then put in shredded lettuce and enough mayo and whipped cream to make a great crunchy, semi-sweet salad. It's very good on hot days. Give it at least 30 minutes to chill.

Source: My mom used to make this all year round, giving the winter blahs a chase when you remember the sweet tastes of summer fruit!
