Perfectly Chocolate Chocolate Cake

Ingredients
  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup cocoa
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp. vanilla
  • 1 cup boiling water

Directions

Heat oven to 350 degrees F. Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla. Beat for 2 minutes on medium speed. Stir in boiling water. (Batter will be thin). Pour into two 9 inch round greased and floured cake pans. Bake 30-35 minutes. Cool 10 minutes. Remove from pans to wire rack. Cool completely. Frost with Perfectly Chocolate Chocolate Frosting (recipe follows). 10-12 servings.

Perfectly Chocolate Chocolate Frosting

Ingredients

  • 1 stick butter or margarine
  • 2/3 cup cocoa
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp. vanilla

Directions

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beat on medium speed to spreading consistency. Add more milk, if needed. Add vanilla. Makes 2 cups.

Yes it does; I usually do it in a Bundt pan (my son always asked for "circle cake) and it comes out a little runny in the center (but no complaints!) The recipe is also great for two 8x8's (square) if you want to bake up a quick "welcome" or comfort cake. This is a tried and true recipe!
