Whole Roasted Garlic Cauliflower

A head of roasted garlic cauliflower.This recipe helps you a achieve a perfectly cooked whole cauliflower with a garlic kick. I used a purple cauliflower, and using this method helped retain its beautiful vibrant colour. It is perfectly tender throughout, with a lovely crisp exterior.

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Ingredients:

  • 1 head cauliflower
  • 1 Tbsp oil
  • salt and pepper
  • 1-2 tsp garlic powder

Steps:

  1. Trim the base of the cauliflower so it can stand up nicely on its own. Place in a pot and add 2 inches of water. Bring to a boil, cover, and simmer for about 12-14 minutes.
  2. A head of purple cauliflower in a pan.
     
  3. Remove cauliflower from pot and allow to drain. Preheat oven to 450 degrees F. Place cauliflower on a greased baking sheet. Brush with oil, then sprinkle salt, pepper, and garlic powder all over.
  4. The head of cauliflower with garlic powder added.
     
  5. Roast in oven for about 20-25 minutes, until edges are crispy. Serve immediately.
  6. The completed roast cauliflower.
