Whole Roasted Garlic Cauliflower

This recipe helps you a achieve a perfectly cooked whole cauliflower with a garlic kick. I used a purple cauliflower, and using this method helped retain its beautiful vibrant colour. It is perfectly tender throughout, with a lovely crisp exterior.

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Ingredients:

  • 1 head cauliflower
  • 1 Tbsp oil
  • salt and pepper
  • 1-2 tsp garlic powder

Steps:

  1. Trim the base of the cauliflower so it can stand up nicely on its own. Place in a pot and add 2 inches of water. Bring to a boil, cover, and simmer for about 12-14 minutes.
  2. Remove cauliflower from pot and allow to drain. Preheat oven to 450 degrees F. Place cauliflower on a greased baking sheet. Brush with oil, then sprinkle salt, pepper, and garlic powder all over.
  3. Roast in oven for about 20-25 minutes, until edges are crispy. Serve immediately.
