This is a great way to use left-over turkey from Thanksgiving and even a good idea for a simple supper Thanksgiving night after all the festivities!

Ingredients

  • 4 cups turkey broth
  • 1 cup or so of cut up leftover turkey
  • 1 cup shredded potatoes
  • 1 cup chopped celery
  • 1 cup shredded carrots
  • 1/4 cup butter
  • 2 cups milk
  • 6 Tbsp. flour
  • 1 cup shredded cheddar cheese

Directions

Boil broth, potatoes, celery and carrots together until tender, approximately 20 minutes. Then add butter. In a blender combine milk and flour. Stir into soup mixture to thicken. It will become like a thin gravy. When this has boiled thoroughly, add cheddar cheese. Stir until melted.
