Marinated Beets

This is great in the summer. They are easy to make and would be great in a tossed salad too.

Ingredients:

• 1 can sliced beets with juice

• some diced onion
• 2-4 Tbsp. vinegar

Directions:

Combine all ingredients in a glass bowl. Cover and chill.
