Recipe: From-Scratch Baked Beans

Ingredients
- 1 lb. dried great northern beans
- 4 to 6 slices bacon
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 cups ketchup (I like Hunt's)
- 1/2 cup molasses
- 1 cup firmly packed brown sugar
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. yellow mustard (I like French's)
- 1 tsp. chili powder
Directions
Place the beans in a large saucepan and cover with salted water by 2 to 3 inches. Soak the beans overnight.
The next day, drain and rinse the beans. Return the beans to the saucepan and cover with fresh water by about 4 inches. Bring to a boil, then lower the heat and simmer for 1 to 1 1/2 hours or until the beans are tender but not bursting open.
While the beans are cooking, mix the ketchup, molasses, brown sugar, Worcestershire sauce, mustard, chili powder together in a large bowl. Preheat the oven to 350 degrees F. Cook the bacon in a large skillet over medium heat until crisp. Remove the bacon with a slotted spoon. Drain the bacon on paper towels, crumble it, and set aside. Add the onion and garlic to the bacon drippings and cook over medium heat, stirring constantly, for 2 minutes. The onion should still be a little crunchy.
Drain the beans, reserving 2 cups of the bean water. Pour the beans and bean water into the bowl with the sauce. Add the bacon and onion and stir to combine well. Pour into a 13x9-inch baking dish and bake for 1 hour or until bubbly. Will keep, refrigerated, for up to 1 week.

Ingredients
- 1 can lima beans (16 oz.)
- 1 can red kidney beans (16 oz.)
- 1 can white navy beans (16 oz.)
- 1 can chick beans (16 oz.)
- 1 can black beans (16 oz.)
- 2 cans Bush's Best Baked Beans (24 oz. each)
- 2 lbs. smoked sausage
- 1 cup brown sugar
- 1 large onion
- 1/2 cup molasses
- 1 bottle Heinz smoked barbecue sauce (16 oz.)
Directions
Drain the liquid off the lime beans, kidney beans, white navy beans, chicken beans, black beans and place in large pan. Add the Bush's baked beans and mix all of the beans together. In a skillet, chop up and cook the smoked sausage with the brown sugar. Remove the sausage mixture from the pan and put it in the beans. Simmer the onions in the sausage drippings. Add the onions, molasses and BBQ sauce to the pan and stir together. Bake at 350 degrees F for 1-1 1/2 hours. Stir every half hour.

Ingredients:
- 1 can kidney beans (16 oz.)
- 1 can butter beans (16 oz.)
- 1 can lima beans (16 oz.)
- 1 can pork and beans (16-20 oz.)
- 10 slices chopped bacon
- 1/2 cup chopped onion
- 1/3 cup vinegar
- 2/3 cup brown sugar
- 1/2 tsp. dry yellow mustard
Directions
Drain all cans well. Brown bacon, drain all but 1 Tbsp. fat and save. Add onion and 1 Tbsp. fat and simmer. Mix vinegar, brown sugar, and mustard. Put beans in casserole. Mix bacon in. Pour vinegar mix over. Bake 45 minutes, covered, 350 degrees F for 15 minutes uncovered. Serves 20

- 1 Tbsp. Bacos or bacon (chopped)
- 1/2 cup brown sugar
- 2 Tbsp. molasses
- Dash of Worcestershire sauce
- 2 drops Liquid Smoke
- 2 Tbsp. ketchup
- 1 Tbsp. dried onion or 2 slices fresh onion
Directions
Mix; put in a covered casserole. Bake at 325 degrees F for 2 hours. Uncover and bake another hour.

I was so very pleased to see that there was a number of baked bean recipes..that is until I clicked on and found only "doctored-up" canned beans. I`d like very much to get recipes for real "baked beans" using raw beans that are soaked then other ingredients added, then baked. Thanks (07/16/2005)

I also was hoping for recipes from scratch. Or even plain cooked canned beans to which you add your own tomato sauce, bacon, and brown sugar (or whatever). I like the canned pork-n-beans fine except for the pork and the sugar. (07/17/2005)

Go to FoodTV.com - click the links for the recipes on the show "Good Eats" - Alton Brown has a recipe called "The Once and Future Beans" - baked beans, from scratch, cooked in the oven in a cast-iron Dutch oven - they are TO DIE FOR! They can be made in a crockpot, too (I would suggest reducing the liquid a bit or they are a little watery).

Boston Baked Beans
Here's a recipe for baked beans from scratch. This was given to me by a man from Boston after he invited us for supper and served them. I believe they would be good as a crockpot meal, also.
Serves 6.
- 1 pound navy or pea beans
- 1 large onion, chopped
- 2 tablespoons Dijon mustard
- 1/4 cup dark brown sugar
- 1/3 cup light brown sugar
- 1/4 cup molasses
- 1 teaspoon salt, or to taste
Discard any discolored beans. In a large bowl, combine the beans with plenty of cold water and soak overnight for 6 to 8 hours.
Drain the beans. In a large pot, combine the beans and enough water to cover them by 1 inch. Bring to a boil, lower the heat to simmer, and cook for 45 minutes or until they are just tender (it may take longer if the beans are old or the soaking time was short). Drain the beans and set aside the cooking liquid.
Set the oven at 325 degrees F. In a bean pot or deep casserole with a lid, combine the beans, onion, mustard, dark and light brown sugars, molasses, and salt. Add enough of the cooking liquid to just cover the beans. Stir to blend them.
Bring the liquid to a boil on top of the stove, then transfer to the oven and bake for 2 hours, checking every 30 minutes to make sure the beans don't dry. Add more cooking liquid if necessary.
P>When the beans are tender, uncover the pot and cook for 20 to 30 minutes more to make a slightly crusty top.

Directions

- 1 lb. hamburger
- 1 small onion (cut up)
- 1 can lima beans
- 1 can green beans
- 1 can pork and beans
- 1 can kidney beans

- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 tsp. dry mustard
Directions
Brown and drain hamburger and onion. Add remaining ingredients. Mix all together. Bake at 300 degrees for 1 hour.

- 1 can pork and beans
- 1/2 cup brown sugar
- 1 cup applesauce
- 1 cup ketchup
- 1 Tbsp. mustard
- Salt (to taste)
- 1 lb. hamburger
- 1/2 cup onion (chopped)
Directions
Brown hamburger and onion together. While this is browning, combine remaining ingredients in a large casserole. Add browned hamburger and onion. Bake at 350 degrees for 30 minutes. This is a good recipe to fix in a crock pot.

- 2 cans pork and beans
- 1 lb. lean beacon (cut in pieces)
- 1 med. onion (chopped)
- 2 med. green peppers (chopped)

- 1 cup brown sugar
Directions
Combine all ingredients and put in 2 medium sized or 1 large casserole dish. Bake, uncovered, at 325 degrees F for 3 hours, stirring occasionally. Uncover the last 30 minutes of cooking.

- 1/2 cup white sugar
- 2 tsp. prepared mustard

- 2 (16 oz.) cans pork and beans
- 6 slices bacon (uncooked)
Directions
In 2 qt. casserole dish, combine all ingredients except bacon slices. Arrange bacon over the mixture and bake, uncovered, at 325 degrees F for 1 1/2 hours.

Pinto beans. You buy them dry? If so, soak them overnight before using. Cover the beans with water and just leave them for 24 hours. Next day, drain off the water, put the beans in a baking pot, add tomato juice and canned, stewed tomatoes (enough to cover the beans), I package onion soup mix, 1 tablespoon prepared mustard, salt, pepper and 1/4 cup molasses. Cover. Bake at 350 degrees F. for two hours. Delicious!

if you have a favorite recipe for baked beans it can be used for any type bean.
my favorite is to add to cooked beans drained of most liquid, ketchup, brown sugar and a little yellow mustard to taste. chopped onions and green peppers sauteed just to soft can be added too. (10/23/2006)

Baked Beans from Scratch
- 2 cups dried Navy beans or pinto beans
- 1 cup brown sugar
- salt and pepper to taste
- 4 strips bacon
- 2 T butter or margarine
To shorten cooking time, place beans in a large saucepan and soak overnight in deep cold water. The next morning, do not drain but cook beans in the soaking cold water. Bring beans to a full boil over high heat; reduce heat so mixture barely simmers. Simmer until beans are tender, about 2 hours. Drain off all but about a cup of the boiling liquid.
Butter a deep round two-quart casserole. Pour beans into casserole dish. Stir in brown sugar, salt and pepper. Lay strips of raw bacon to top of beans. Dot with butter in between bacon strips.
Bake at 350 degrees Funcovered 1-1/2 to 2 hours until bacon is browned but beans are still moist.
