Anything Casserole

Ingredients

  • Meat: Leftovers of chicken, pork, turkey, OR Roast (just one) -- Any amount
  • Vegetables: 2 cups frozen mixed vegetables (or 2 cans, drained)
  • Sauce: 2 cups Gravy or thickened broth, or 2 cans cream soups plus 1/2 can milk -- your choice soup
  • Baking Soda Drop Biscuits (see below) or canned biscuit (pop when you open)dough

Directions

Add meat, vegetables and sauce to 9X13 pan. Mix. Drop biscuit dough by Tablespoon on top of mixture and lightly spread to cover, but leave some gaps for bubbles to escape. (If using canister of biscuits, cover with foil until last 15 minutes of bake time.)

Bake at 350 degrees F for 40 minutes. Biscuits will be brown on top and no longer gooey underneath.

We use this for all our leftovers. It's a very hearty meal and is great reheated for lunches!

Baking Powder Drop Biscuits

Ingredients

  • 2 cups all-purpose Flour
  • 1 Tbsp. Baking powder
  • 1/2 tsp. Salt
  • 1/3 cup Shortening
  • 1 cup Milk

Directions

Combine flour, baking powder, and salt; cut in shortening with a pastry blender until mixture resembles coarse meal. Add milk, stirring until dry ingredients are moistened.
