Cheese Topped Ham Egg and Asparagus Bake


  • 1 cup cooked ham, diced
  • 1/3 cup onion, chopped
  • 3 Tbsp. red bell peppers, chopped
  • 1/2 lb. fresh asparagus, trimmed, broken in to pieces and blanched or frozen cut asparagus, thawed

  • 5 eggs
  • 1 1/3 cups milk
  • 2/3 cup all-purpose flour
  • 3 Tbsp. Parmesan cheese, finely shredded
  • 1/2 tsp. dried basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 cup Cheddar cheese, shredded


Preheat oven to 425 degrees F. Lightly grease an 8 x 8 inch baking dish.

Mix ham, onion, red bell peppers, and asparagus in the prepared baking dish. In a large bowl, beat together the eggs, milk, flour, Parmesan, basil, salt, and pepper. Pour over the ham mixture.

Bake 20 minutes or until a knife inserted in the center comes out clean. Sprinkle with Cheddar cheese. Continue baking 3 to 5 minutes, or until cheese is melted. Let stand 5 to 10 minutes before serving.
