Turkey Pockets al Greco

  • 1 Tbsp. oil
  • 1 lb. ground turkey
  • 1 cup finely chopped onion, divided
  • 1 clove garlic, minced
  • 1 Tbsp. dried parsley
  • 1 tsp. dried oregano
  • Ad
  • 8 mini pita breads (3 inches in diameter), warmed
  • 1 cup tomato, diced
  • 1 cup peeled, thinly sliced cucumber
  • 2 oz. feta cheese


Brown turkey, 1/2 cup onions, and garlic in oil. Stir in parsley and oregano; cook 2 minutes. Trim about 1/2 inch off the top of each pita. Spoon meat mixture into each pita. Top with remaining onions, tomato, cucumber, and feta cheese.
