Lemon Squares
Ingredients
1 1/2 cups flour
1/2 cup brown sugar
1 stick margarine
Filling:
2 eggs, beaten well
1 cup brown sugar
1 1/4 cup coconut
1/2 cup chopped pecans (opt.)
2 Tbsp. flour
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla
Glaze:
1 Tbsp. melted butter
2 Tbsp. lemon juice
1 cup powdered sugar
Directions
Mix flour, sugar and margarine. Pour into 9x13 inch pan. Bake 10 minutes at 275 degrees F.
Pour filling over baked pastry. Return to oven and bake an additional 20 minutes at 350 degrees F. Remove from oven and glaze while hot. Serves 24.

Variations
Lemon Squares
A favorite of my sisters!
Ingredients:
1 cup flour
1/2 cup margarine
1/4 cup powdered sugar
2 eggs, beaten
2 Tbsp. flour
1/2 tsp. baking powder
1 cup sugar
2 Tbsp. lemon juice
Directions:
Mix first three ingredients and pat into 8x8 inch pan. Bake at 325 degrees F for 20-25 minutes or until delicate brown. Mix together the 2 Tablespoons flour, baking powder, sugar, and lemon juice and add to beaten eggs. Pour over baked crust and bake another 25 minutes or until topping is firm. When nearly cool, sprinkle lightly with powdered sugar. Cut into squares and leave in pan until entirely cool.
