Ingredients

  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 1 stick margarine
Filling:
  • 2 eggs, beaten well
  • 1 cup brown sugar
  • 1 1/4 cup coconut
  • 1/2 cup chopped pecans (opt.)
  • 2 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
Glaze:
  • 1 Tbsp. melted butter
  • 2 Tbsp. lemon juice
  • 1 cup powdered sugar

Directions

Mix flour, sugar and margarine. Pour into 9x13 inch pan. Bake 10 minutes at 275 degrees F.

Pour filling over baked pastry. Return to oven and bake an additional 20 minutes at 350 degrees F. Remove from oven and glaze while hot. Serves 24.

A favorite of my sisters!

Ingredients:

  • 1 cup flour
  • 1/2 cup margarine
  • 1/4 cup powdered sugar
  • 2 eggs, beaten
  • 2 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1 cup sugar
  • 2 Tbsp. lemon juice

Directions:

Mix first three ingredients and pat into 8x8 inch pan. Bake at 325 degrees F for 20-25 minutes or until delicate brown. Mix together the 2 Tablespoons flour, baking powder, sugar, and lemon juice and add to beaten eggs. Pour over baked crust and bake another 25 minutes or until topping is firm. When nearly cool, sprinkle lightly with powdered sugar. Cut into squares and leave in pan until entirely cool.

Servings: 9 bars
Prep Time: 20-30 Minutes
Cooking Time: 45-50 Minutes

Ingredients

  • 18 squares graham crackers, finely crushed (about 1 1/4 cups crumbs)
  • 1/3 cup margarine or butter, melted
  • 1 qt. frozen vanilla ice cream or frozen yogurt, softened

  • 1 can frozen lemonade concentrate, thawed
  • 1/2 cup whipped topping, thawed

Directions

Mix the graham cracker crumbs and margarine together. Press firmly into the bottom of a 9 inch square pan. In a large bowl, with an electric mixer, on medium speed, beat the yogurt and lemonade concentrate together until it is well blended. Spread the yogurt mixture over the crust and freeze for 4 hours or until it firms. Cut into squares and top each square with whipped topping. You can garnish with fresh mint sprigs and lemon slices, if you like. Store leftover dessert in the freezer.

Ingredients

Crust and Streusel
  • 3/4 cup butter or margarine, softened
  • 1 1/4 cups packed brown sugar
  • 2 cups flour
  • 1 1/2 cups rolled oats
Filling
Ad

  • 1 can sweetened condensed milk
  • 2 tsp. grated lemon peel
  • 1/2 cup lemon juice
  • powdered sugar (opt.)

Directions

Preheat oven to 350 degrees F. For crust, beat butter and sugar in large bowl until well blended. In medium bowl, combine flour and oats. Add to butter mixture; mix until mixture resembles coarse crumbs. Reserve 2 cups oat mixture for streusel topping; press remaining oat mixture onto bottom of greased 9 inch square baking pan. Set aside.

For filling, combine all ingredients except powdered sugar in medium bowl; blend well. Pour filling over crust; sprinkle with reserved oat mixture. Press gently into filling. Bake 30-35 minutes or until golden brown. Cool completely before cutting into squares. Sprinkle with powdered sugar just before serving, if desired.

Press evenly with hands in bottom and about 5/8 inch up sides of an ungreased pan, 8x8x2 inch. (If dough is sticky, flour fingers.) Bake about 20 minutes
