Easy Pot Roast (Crockpot)

My favorite Pot Roast (and it's easy and thrifty too!) I stumbled upon this a few weeks ago and LOVE it.

Ingredients

  • 1 onion
  • 2 lb. boneless chuck roast
  • beef broth (canned, cube, or beef base)
  • 2 Tbsp. balsamic vinegar (doesn't have to be the expensive kind)

Directions

Just slice the onion into the crock pot, then cut the roast into serving size pieces removing all the fat you can. Add it to the crock pot on top of onion. Add 1 cup of beef broth (more is ok but not needed) and splash in the vinegar.

Cook on High one hour, then on low for 3-5 hours. Pull out the beef and onions and thicken the gravy.

This makes plenty for four large servings. Serve with mashed potatoes or noodles. It is AMAZING!

Source: Made it up because I didn't want to take the time to brown the beef. Balsamic just popped into my head.

Worcestershire sauce can be used in place of the vinegar; excellent recipe!
