Ingredients
- 2 cups oatmeal
- 1 cup all purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 4 oz. chocolate chips
- 3 oz. raisins
- 3 oz. walnuts
- 1 Tbsp metamucil*
- 1 egg
- 4 oz. orange juice**
- 1 Tbsp. mayonnaise*
- 4 Tbsp. honey
- 1 tsp. granulated sugar*
*optional
**Or substitute your preferred fruit juice
Directions
Combine dry ingredients thoroughly. Combine wet ingredients, beating lightly. Combine wet and dry ingredients. Spoon into muffin tins; makes about two dozen. Bake at 350 degrees F for 24-30 minutes. Cool, store.
Good for breakfast, or snacks. Adjust liquid amounts and cooking times to suit your tastes.
