Lima Beans and Corn

Ingredients:

  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1/4 cup Parmesan cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup pimiento, 1 in. pieces
  • 1 pkg. frozen baby lima beans
  • 1 pkg. frozen whole kernel corn
  • 1/2 cup green onion tops, cut up
  • 2 cups dry bread crumbs
  • 3 Tbsp. melted butter

Directions:

Melt butter, blend in flour, add milk stirring constantly. Cook until thick; simmer 2-3 minutes. Add cheese, salt and pimiento. Combine corn with beans and onion tops. Pour all together in well greased casserole. Sprinkle top with bread crumbs. Drizzle melted butter over this. Bake 30 minutes at 350 degrees F.
