Creamy Bacon Corn
- 3 slices bacon
- 1/3 cup green pepper, chopped
- 1/3 cup onion, chopped
- 2 eggs, beaten
- 1 can creamed corn
- 1 tsp. salt
- 1/8 tsp. pepper
Fry bacon; set aside. Drain all but 3 tablespoons drippings from skillet. Cook and stir green pepper and onions in drippings until onion is tender. Add remaining ingredients. Cook and stir until eggs are thickened throughout but still moist. Crumble bacon; sprinkle on egg mixture. Makes 4-6 servings.
