This makes a special looking cake for birthdays.
Ingredients:
- 2 1/4 cups all purpose flour
- 4 tsp. baking powder
- 3/4 tsp. salt
- 1 1/3 cup granulated sugar
- 1/2 cup shortening
- 3/4 cup milk
- 1 tsp. vanilla
- 1/4 cup milk
- 3 eggs
- 1/4 cup multicolored decorator beads
Directions:
Preheat oven to 350 degrees F. Grease two 8 inch round layer cake pans and line bottoms with waxed paper or dust lightly with flour. Sift together dry ingredients in large bowl. Add shortening, milk, and vanilla. Beat 1 minute at low speed with electric mixer or 150 strokes by hand. Add milk and eggs and beat for 2 minutes at low speed. Fold in decorator beads.
Pour batter into prepared pans and bake 35 to 40 minutes, until cake springs back when lightly touched. Cool 5 minutes, then remove from pans.
