Balsamic Vinaigrette Roasted Pork

Easy and yummo! ;-)


  • 1 Tbsp. meat seasoning of your choosing
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 lb. boneless pork loin roast


Mix meat seasoning well in balsamic vinegar and stir in the olive oil. Place pork into a baking dish and pour marinade over the top. Marinate, covered, at room temperature for 2 hours, turning occasionally.

Preheat oven to 350 degrees F.

Bake, basting occasionally until the pork reaches an internal temperature of 145 degrees F, about 1 hour. Let the roast rest for 10 minutes before slicing and serve.

This just might go with that Pina Colada Rice. LOL. Sounds good anyway. I like "easy", too, these days. Thank you for sharing.
