- 1 Tbsp. meat seasoning of your choosing
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1 lb. boneless pork loin roast
Mix meat seasoning well in balsamic vinegar and stir in the olive oil. Place pork into a baking dish and pour marinade over the top. Marinate, covered, at room temperature for 2 hours, turning occasionally.
Preheat oven to 350 degrees F.
Bake, basting occasionally until the pork reaches an internal temperature of 145 degrees F, about 1 hour. Let the roast rest for 10 minutes before slicing and serve.

Summer's not over yet so there's still time to grill this tasty tenderloin before Winter sets in ;-)
- 1 pork tenderloin, one pound
- 3 Tbsp. apricot preserves
- 1/4 cup mustard
Season the tenderloin with salt and pepper. Stir together the preserves and mustard in a small bowl. Place pork over a medium to hot grill for about 15 to 25 minutes or until internal temperature reaches 160 degrees F. Begin brushing with mustard mixture after about 5 minutes.

- 2 pork tenderloins (1 lb. each)
- 2/3 cup honey
- 1/2 cup Dijon mustard
- 1/4-1/2 tsp. chili powder
- 1/4 tsp. salt
Place pork tenderloins in a large resealable plastic bag or shallow glass container. In a bowl, combine the remaining ingredients; set aside 2/3 cup. Pour remaining marinade over pork; turn to coat. Seal or cover and refrigerate at least 4 hours, turning occasionally. Drain and discard marinade. Grill pork, covered, over indirect medium heat for 8-9 minutes on each side or until meat juices run clear and a meat thermometer reads 160-170 degrees F. In a saucepan, warm the reserved sauce; serve with pork.
