Artichoke Red Pepper Dip
Artichoke Red Pepper Dip
I wanted a different dip to serve other than mixing mayo and mustard together. I looked in my pantry and saw the artichokes and went from there.

Ingredients

  • 1- 8oz package of cream cheese
  • 1- cup of sour cream
  • 1- 14 oz can of quartered artichoke hearts, drained (not marinated) (I used Vigo)
  • 1- 12 oz jar sweet roasted red peppers, drained (not marinated) (I used Dunbars)
  • 1/2 cup of real bacon chips (I used Kroger brand)

Directions

Blend softened cream cheese and sour cream in a med size bowl. Add artichoke hearts and stir. Add roasted red peppers and stir. Add bacon chips and stir altogether until well mixed. Garnish with a sprinkle of bacon bits. Serve right away or chill.

Serve with any type bread or chips.

Great as filling for lettuce wraps!

Suggestions: Hawaiian bread, bagel chips, tortilla chips, French bread, Italian sweet bread

Variations: Add sliced black olives and/or sliced green olives with pimentos.

Yum! Sounds good! This can be made lower-fat by subbing low fat sour cream and Neufchatel cheese. Some grated onion would be good, too. This is an inspiration!

It was delicious. A fabulous break from the ordinary dips.
Had zest and a lot of great flavor. Great recipe.
