Corn Bread Casserole

A well balanced meal, that tastes good.

Ingredients:

  • 1 lb hamburger
  • 1 pkg frozen white corn
  • 1 can of kidney beans
  • 2 boxes of Jiffy corn bread mix
  • 1 can of diced tomatoes, chili powder
  • 1 small can of diced green chilies
  • 1 small can of sliced olives
  • cheddar cheese
  • sour cream

Directions:

Brown the hamburger meat in a skillet and drain fat. Add the corn, beans, and the canned tomatoes. season with as much chili powder as you like. Mix up the corn bread mix, add the small can of green chilies and a handful of the cheddar cheese.

Put the hamburger mixture in a 9x13 inch baking dish, top with more cheese, top with the corn bread mixture, bake at 400 degrees F. until the corn bread is golden brown, cut into square type servings, top with as much sour cream as desired.

Servings: 6-8
Time:30 Minutes Preparation Time
35 Minutes Cooking Time

Don't know if we can get the corn bread mix here in the UK though. Can you recommend any substitute?

I have made this before, but without the beans. And I used Mexican cornbread mix. It is good hot or cold!
