Pineapple Ham Loaf

Ingredients:

  • 1 lb. ground smoked ham
  • 1 lb. ground lean fresh pork
  • 2 eggs
  • 3/4 cup soft bread crumbs
  • 3/4 cup milk
  • 2 Tbsp. ketchup
  • 8 slices drained pineapple

Spicy Glaze:

  • 1 cup light brown sugar
  • 1/4 cup pineapple syrup
  • 2 Tbsp. vinegar
  • 1 tsp. prepared mustard

Directions:

Mix together all ingredients except pineapple. Divide into 9 patties. In a shallow baking dish, for a long roll, alternate a patty and a pineapple slice, starting and ending with meat. Bake 30 minutes in a slow oven, 325 F.

Combine ingredients for Spicy Glaze. Bast with glaze and bake 1 hour longer; basting every 20 minutes. 8 servings.

Tip: Pineapple Ham Loaf

Ingredients:

  • 1 lb. ground ham
  • 1 lb. ground sausage
  • 3/4 cup bread crumbs
  • 3/4 cup milk
  • 2 Tbsp. ketchup
  • 2 eggs
Glaze:
  • 1 cup brown sugar
  • 1/4 cup pineapple juice
  • 1 tsp. prepared mustard

Directions:

Mix all ingredients well. Shape into 10 large patties and alternate with 10 slices pineapple in a 9x13 inch baking dish. Bake at 325 degrees F for 30 minutes. Add glaze, basting every 20 minutes. Bake a total of 1 1/2 hours at 325 degrees F.
