Scrambled Eggs with Chorizo

Spice up your morning with these yummy scrambled eggs. Chorizo really gives this dish flavor.


  • 3 flour tortillas (6-inches)
  • Ad
  • 2 Tbsp. butter, divided
  • 3 ounces uncooked chorizo or spicy pork sausage
  • 1 Tbsp. diced seeded jalapeno pepper
  • 2 garlic cloves, minced
  • 2 plum tomatoes, seeded and chopped
  • 1/2 tsp. Cajun seasoning
  • 4 eggs, beaten
  • 3 Tbsp. picante sauce


Cut tortillas into quarters and place on a baking sheet coated with cooking spray. Bake at 400 degrees F for 3 to 5 minutes, or until crisp.

Meanwhile, in a small skillet, heat 1 tablespoon butter. Add the sausage, jalapeno and garlic. Cook over medium heat until meat is no longer pink; drain. Stir in tomatoes and Cajun seasoning.

In another skillet, heat remaining butter until hot. Add beaten eggs; cook and stir over medium heat until completely set. Divide scrambled eggs between two plates. Serve with chorizo mixture, tortillas and picante sauce.
