Steve's Chicken and Dumplings

Here is a good use for leftover chicken. Mine is for one person.

Ingredients

  • 1 cup Pancake Mix
  • 1/4 cup water
  • 1 piece of chicken
  • 1 can condensed cream of chicken soup

Directions

Mix pancake mix (I use this instead of regular baking mix, just because I like it. You can use Jiffy or whatever pleases you.) Cut chicken into small pieces. Whether you remove the skin and battered part is up you, I remove it. Prepare soup according to directions on can and add chicken. Once you have brought that to a slow boil, turn down the heat and spoon in the batter mix. Simmer for about 10-15 minutes and remove from heat.
