- 3/4 cup coarsely chopped celery
- 1 med. onion, chopped
- 2 Tbsp. butter
- 1/4 cup chopped red sweet pepper
- 2 cups cooked rice
- 1 1/2 cups chicken, chopped
- salt and pepper, to taste
Saute celery and onion in butter in skillet until tender. Add remaining ingredients. Simmer for 10 minutes, stirring constantly.
