Marinated Cherry Tomatoes

A nice little chilled side dish ;-)

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 Tbsp. extra virgin olive oil
  • 2-1/2 tsp. red wine vinegar
  • Advertisement

  • 1/4 tsp. dried parsley
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried oregano
  • Pinch of salt
  • 1/2 tsp. sugar

Directions:

Mix all ingredients well, except for the tomatoes, in a bowl.

Add tomatoes and gently stir to coat. Chill for 2 hours. Gently stir again before serving.

Add vodka, omit the vinegar. It is really good served really cold!

Our family has been doing this for years, it is good. You can do the same thing with Italian Dressing.

Any ripe tomato will do. Slice up larger ones. Best if let to blend awhile. I halve small ones.

Whether you use vodka or vinegar, this is a very nice cooling treat here in south Florida, especially in the hot, humid summertime. We have some really great fresh produce markets in our area as well, and we can buy vine-ripened tomatoes almost all year long.

Hi Pookarina Julia :-) It never dawned on me to try this recipe with vodka so I'll have to give it a try :-) I don't drink vodka, but one of my neighbors does and I am sure they won't mind donating some and especially if I share some of the final product ;-) And, yes, the dressing does indeed taste yummy on other tomato varieties, but cherry toms happen to be my fave :-) Thank you so much for the thumbs up!
