Elvis Presley Poundcake

Haven't made it yet. Just was on a postcard I got.

Ingredients:

  • 3 cups sugar
  • 2 sticks (1 cup) butter softened
  • 7 eggs, at room temperature
  • 3 cups cake flour, sifted twice, divided
  • Ad
  • 1 cup whipping cream
  • 2 tsp. vanilla extract

Directions:

Heat oven to 350 degrees F. Combine sugar and butter in a bowl, beat on medium speed with your electric mixer until creamy, about 3 minutes.

Add eggs, one at a time, beating after each addition.

Stir in 1-1/2 cups of flour, add whipping cream

Beat in remaining flour and vanilla.

Pour into two buttered and floured loaf pans. Bake until golden ans a tester inserted in the center of cakes comes out clean, about 1 hour.

Cool in pan for 5 minutes. Remove from pans and cool on wire racks.

Makes 2 loaf cakes,

60 Minutes Cooking Time
