Taco Meatloaf

Nice twist on meatloaf.

Ingredients:

  • 1 1/2 lbs. ground beef
  • 1 onion, chopped
  • 1 cup tortilla chips
  • 1 jar spaghetti sauce (32 oz.)
  • 1 env. dry taco seasoning mix
  • 1 pkg. shredded cheddar cheese (4 oz.)

Directions:

Combine first 3 ingredients in bowl; mix well. Add enough spaghetti sauce to make of desired consistency. Pat 1/4 inch thick on waxed paper. Sprinkle with taco seasoning and cheese. Roll as for jelly roll. Place in shallow baking dish. Pour remaining spaghetti sauce on top. Bake at 350 degrees F for 1 hour.
