Diabetic Recipes for a Crock Pot

I am needing some good, simple crock pot recipes for diabetics. I don't like to cook so we need to keep it simple.

We like to take a pork roast (of any type) and throw it in the crockpot with a small jar of pepperocini peppers, juice & all. They are just spicy enough to really make it taste good. You can also add BBQ sauce when you take it out (sugar free, of course)
