Who knew you could make yummy pancakes with just 2 ingredients? All it takes is one banana and two eggs. These gluten free discs might not taste exactly like your standard pancake, but once you try them, you will be hooked. Sweet, custardy and guilt-free!

Total Time: 10 minutes

Yield: 10 mini pancakes

Ingredients:

  • 1 banana, peeled
  • 2 eggs
