Bacon and Olive Stuffing

Really different, but good stuffing recipe.


  • 4-6 slices bacon, diced
  • 1/2 cup chopped onion
  • 1 1/3 cup Minute Rice
  • 1 1/2 cups water
  • Ad

  • 1/2 tsp. salt
  • 1 cup diced celery
  • 1/4 cup chopped parsley
  • 1/4 cup sliced stuffed olives
  • 1/2 tsp. poultry seasoning
  • dash pepper


Fry diced bacon in saucepan until crisp and golden brown. Remove bacon and set aside. Reserve 2-3 Tbsp. drippings in saucepan. Add onions and saute until tender but not brown. Add Minute Rice, water, salt and celery. Mix just to moisten all of rice. Bring quickly to boil over high heat, cover, remove from heat and let stand 13 minutes. Add bacon and remaining ingredients; mix lightly with fork. Put into poultry, not packing tightly. Makes enough for a small chicken. For turkey, double or triple the recipe.

Cooking Time: 15 Minutes

I never know just what to do with those little Rock Game Cornish Game
Hens. I think this stuffing would be perfect for them since they are a bit different anyway. Served with some nice asparagus or the tender young green beans left whole would look really nice plated. Very simple and elegant.
