piece of Baked Pineapple Bread in serving dishThis sweet treat is very similar to a bread pudding but it has no dairy, nor is it too custardy. It's mostly made out of leftover cubed bread and chunks of pineapple. It works great as a breakfast treat, with mid afternoon tea, or for dessert.

Total Time: 70 minutes

Ingredients:

Baked Pineapple Bread ingredients
 

Steps:

  1. Preheat oven to 350F. In a large bowl, mix together the pineapple, sugar, eggs, and melted butter.
  2. Baked Pineapple, egg and sugar to mix in bowl
     
  3. Add cubes of bread to the mixture.
  4. added bread chunks to pineapple mixture
     
  5. Stir the bread around to make sure it absorbs all the liquid.
  6. Pineapple Bread mixture in bowl

  7. Pour into a buttered baking dish, cover, and let sit for 20 minutes.
  8. Pineapple Bread in baking dish
     
  9. Sprinkle with crushed crackers and cinnamon.
  10. Pineapple Bread in baking dish covered with crumbled crackers and cinnamon
     
  11. Bake in preheated oven for 45 to 55 minutes, until golden brown.

Yes, I had a huge loaf of bread my dad hated, so I did him a favour and "fixed" it with his favourite fruit :)

NO DAIRY ? Butter is churned milk and bread most likely has milk in it, as do the crackers. Just saurian'....But it sure looks good !

Oops! What I meant was it has no milk the way a bread pudding would add! Sorry!
