A mixture of cherry and grape tomatoes from our garden about to go in the oven. Drizzle with a little olive oil and balsamic vinegar, sprinkle with kosher salt and pepper and broil for a few minutes in the oven or put on the grill in aluminum foil.

Delicious tossed with pasta. You can also add some red onion or garlic, I've done it both ways. I love summer tomatoes!

Lightly oil the grill and preheat to medium heat. Slice off the top of each tomato and use a spoon to hollow out the seeds and watery juices.

Sprinkle the inside with pepper and rub olive oil on to the outside of the tomatoes, coating well.

Slice tomatoes and sprinkle shredded or a slice of mozzarella cheese on each tomato slice. Combine oil, salt, and pepper. Drizzle over tomato and cheese. Sprinkle with basil. Either place under broiler until cheese has melted or serve cold.
