You'll have to check with the restaurant and their regulations. It does look like Chlorine, ammonia and iodine are 3 common cleaning for commercial kitchens.

Ammonia is a very good cleaner, but using it safely you need to dilute it. You could damage your lungs if you do not dilute. It is a poison gas.

In a 25 oz. spray bottle, pour between 5 to 10 oz. of ammonia. Fill the bottle with water. Then you will have about forty cents worth of cleaning.
