Carrot Cake

Ingredients

  • 1 1/2 cups cooking oil
  • 2 cups sugar
  • 4 eggs
  • 2 1/4 cup flour
  • 1 1/2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • Pinch of salt
  • 2 cups raw carrots (shredded)
  • 2 cups flake coconut
  • 1 cup nuts (chopped)
  • 1 can crushed pineapple (drained)

Frosting:

  • 1/2 stick butter or margarine (softened)
  • Ad

  • 1 pkg. cream cheese (softened)
  • 1 tsp. vanilla
  • 3-4 cups powdered sugar
  • Tiny bit of milk

Directions

Combine all ingredients in order given and pour batter in a greased and floured 9x13 inch pan. Bake at 350 degrees F for 40 minutes (sometimes longer). May bake in layers. Make frosting.
